This recipe for Dried Beef Pickle Roll Ups is an easy three ingredient appetizer that every one will love, perfect for the holiday's or family get togethers! So simple to make ahead just using baby dill pickles, cream cheese, and dried beef, make a double batch because these will disappear fast!

Dried Beef Pickle Roll Ups

Pickle rolls ups were first introduced to me when my husband and I had just started dating, his step-mom Lisa had made them and my mind was blown.

I have always been a huge pickle person and then she went ahead and added cream cheese and dried beef, and now I have never not made these for a holiday meal.

Incredibly simple to make, the way I learned how to make them differs slightly from what some other recipes for pickle rolls are on the internet. And I will be continuing to make them my way because I think it is easier!

First off the simplest way to make them is using BABY DILL PICKLES opposed to the larger dill pickles, this keeps the roll-ups small to begin with so you don't have to bother cutting them into bite size pieces. Just roll and serve!

Second, the dried beef….

So Lisa happens to be from Austin, MN and for those of you who have never heard of Austin, MN there is good reason, its a small town in southern Minnesota.  BUT it also happens to be the headquarters of the well known Hormel Foods. Well wouldn't cha know (that is Minnesotan for wouldn't you know) I happen to think that Hormel's version of Dried Beef is an absolute must for this recipe. Forget all of that other ham, go find actual Hormel Dried Beef, makes all the difference in this recipe! This isn't an ad, I am just a fan.

So I consider all of those other recipes wrong, skip the large pickles and ham, make life better and easier and follow my recipe below.

Pickle Roll Ups Recipe

For this recipe you will need:

  • 4 oz plain cream cheese, softened (half a package)
  • 16oz Baby Dill Pickles
  • 5 oz container Dried Beef

Start by draining all of the juice from the pickles. Pour the pickles into a bowl and use a paper towel to gently remove any access juice from the pickles. The more dry the pickles are the better the cream cheese will stick to them.

Take a small amount of cream cheese on a butterknife and spread it across one side of a piece of the dried beef. Spread enough cream cheese to evenly coat the entire side of the piece of beef.

Add a baby dill pickle to the center of the cream cheese on the dried beef and gently roll up both sides of the dried beef using the cream cheese like a 'glue', overlapping the beef if possible.

Repeat process until you run out of pickles. Serve whole or if you want to make smaller cut in half with a serrated knife.

Notes on Pickle Roll Ups with Dried Beef

This is one of those recipes where the amount of ingredients never quite match up, you are mostly likely to have dried beef and cream cheese leftover but this is fully dependent on the size and quantity of your pickles, which will vary by brand.

If you are having a large crowd, you could easily get more pickles and use the whole container of cream cheese and easily make more.

If the cream cheese isn't soft enough it will slightly tear the dried beef, so it is best to make sure the cream cheese is soft.

Can you make Pickle Roll Ups The Night Before?

Of course!

These are so easy to make the night before you actually need them and store them in the fridge.

In all honesty most of the time when I make these, I have finished all of my other prep for the occasion, I take my pickle roll up ingredients to the living room and make them while I watch TV!

How do I serve this Recipe for Pickle Roll Ups?

Like I said before my whole intention with this recipe is simple & easy. So I suggest just stacking them on a small plate for the appetizer table. I never bother cutting them or putting toothpicks in them, I don't have time for that…OR…

Prep Time 10 minutes

Total Time 10 minutes

Ingredients

  • 4 oz plain cream cheese, softened

Instructions
